basil avocado aoli

What you’ll need:
~1 batch
1/2 cup lemon juice
2 tbsp minced garlic
1 1/2 tbsp kosher salt
1/2 tbsp black pepper
3 cups oil, blended 75/25
3/4 cup egg yolks, pasteurized
1/4 cup water
2 avocados, halved, scooped, and cored
1 cup basil
2 cups spinach
Instructions:
In a blender (vitamix), blend the oil, basil and spinach, to break down greens and preserve the green color. (max 1 minute)
In a food processor (robot coupe), puree the lemon juice, garlic, kosher salt and black pepper for 1 minute.
Add the egg yolks, and puree for an additional minute.
With the food processor running, slowly drizzle in the mixture from the blender, until all emulsified together.
Add chopped up avocado and puree for 1 to 2 minutes.
If it is too thick, add water.
Check seasoning.
Transfer with a spatula into storage container, and refrigerate until ready to use.
