basil avocado aoli

“Whether it be breakfast scrambled eggs, lunch chicken ciabatta sandwich or a grilled salmon fillet for dinner, this aioli enhances any meal. With its rich herbaceous flavor, Basil avocado aioli is a great condiment for almost anything” -Chef Ant

What you’ll need:

~1 batch

  • 1/2 cup lemon juice

  • 2 tbsp minced garlic

  • 1 1/2 tbsp kosher salt

  • 1/2 tbsp black pepper

  • 3 cups oil, blended 75/25

  • 3/4 cup egg yolks, pasteurized

  • 1/4 cup water

  • 2 avocados, halved, scooped, and cored

  • 1 cup basil

  • 2 cups spinach

Instructions:

  • In a blender (vitamix), blend the oil, basil and spinach, to break down greens and preserve the green color. (max 1 minute)

  • In a food processor (robot coupe), puree the lemon juice, garlic, kosher salt and black pepper for 1 minute.

  • Add the egg yolks, and puree for an additional minute.

  • With the food processor running, slowly drizzle in the mixture from the blender, until all emulsified together.

  • Add chopped up avocado and puree for 1 to 2 minutes.

  • If it is too thick, add water.

  • Check seasoning.

  • Transfer with a spatula into storage container, and refrigerate until ready to use.
