homemade apple cobbler

What you’ll need:
~24 servings
Topping:
16 oz all purpose flour
7.05 oz granulated sugar
.55 oz kosher salt
1.34 oz baking powder
12 oz unsalted butter - cold
10 1/4 oz heavy cream
10 1/4 oz buttermilk
16 oz instant quick oats
Filling:
12 Granny Smith apples
12 Gala apples
2.13 oz all purpose flour
32 oz apple cider
2.25 oz brown sugar
.11 oz cinnamon
.25 oz ground ginger
.06 oz kosher salt
.5 oz vanilla extract
4 oz butter
6.6 oz toasted walnuts
Instructions:
Topping
Put all the dry ingredients into the mixer bowl.
Cut the butter into small cubes.
Cut the butter into the dry ingredients.
Add the heavy cream and the buttermilk.
Transfer from the mixer into a container, and put aside.
Filling:
Peel the apples and cut to desired size.
Cook the butter and vanilla in a pot, large enough to fit the apples, until the butter is slightly browned - around 2-3 minutes on medium high.
Once the butter is slightly browned, add the apples, spices, kosher salt, sugar and cider.
Cook until the apples are soft.
Add the flour and continue to cook until the sauce has thickened - around 10-15 minutes.
Remove from the heat and the pot, and cool completely.
Distribute the filling into 24 ramekins/vessels.
Cover with walnuts and cobbler topping.
Bake apple cobbler for 12 minutes at 350 degrees.
