low country fritters

“One of the most flavorful Southern cuisines is Low Country Cooking, and these fritters are no exception. I promise, your family and guests will praise you when you whip up these golden, crispy, & delicious delights at your next gathering!” -Chef Ant

What you’ll need:

~1 batch

  • 3 cup cornmeal

  • 1 cup flour, all purpose

  • 3 tbsp baking powder

  • 3 tbsp kosher salt

  • 3 tbsp black pepper

  • 3 tbsp garlic

  • 3 tbsp shallot

  • 2 tbsp Old Bay seasoning

  • 3 cup celery

  • 1.5 cup whole milk

  • 1 cup parmesan, shredded

  • 1 tbsp spicy mustard

  • 1 tbsp lemon juice

  • 3 eggs

Instructions:

  • In a large stainless steel bowl, combine cornmeal, flour, baking powder, kosher salt, black pepper and Old Bay with a whisk.

  • In a separate bowl, mix the whole milk, parmesan, spicy mustard, lemon juice and eggs with same whisk.

  • On a cutting board, cut garlic, shallot and celery to specified cut above.

  • Add vegetables into the wet ingredient bowl. Mix with whisk to combine.

  • Combine the wet ingredient bowl into the dry ingredient bowl, and whisk until well combined.

  • Transfer into a container with a spatula, and refrigerate.

  • Test each batch that you make after 30 minutes to 1 hour in the cooler. Extra cornmeal, flour or milk may have to be added to compensate.
