lemon garbanzo bean & feta salad

Today, Chef Ant is sharing his recipe for simple, yet delicious lemon garbanzo bean & feta salad.

What you’ll need:

~4 servings

  • 1/2 cup boiling water

  • 1/3 cup uncooked bulgur

  • 1 1/2 tbsp fresh lemon juice

  • 1/3 cup chickpeas (rinsed and drained)

  • 2 tbsp cucumber (peeled and chopped)

  • 2 tbsp celery (small dice)

  • 2 tbsp red onion (small dice)

  • 1 1/2 tbsp feta cheese (crumbled)

  • 1 1/2 tsp dill (chopped)

  • 2 tsp olive oil

  • 1/8 tsp salt

  • 1/8 tsp pepper

Instructions:

  • Combine boiling water, bulgur, and lemon juice in a medium bowl

  • Let mixture stand for 15 minutes

  • Add chickpeas, cucumber, celery, diced red onion, feta cheese, and dill

  • Toss gently to combine

  • Combine lemon juice, olive oil, salt, and pepper, stirring with a whisk

  • Drizzle over bulgur mixture, and toss gently to coat

  • Cover and chill
