What you’ll need:

~1 gallon

  • 24 roma tomatoes, chopped

  • 3 english cucumbers, peeled and chopped

  • 6 garlic cloves, chopped

  • 6 tbsp sherry vinegar

  • 6 tsp smoked paprika

  • 1 1/2 cup water

  • 3 tbsp salt

  • 2 1/4 cups extra virgin olive oil

Instructions:

  • Combine all ingredients in a mixing bowl except the extra virgin olive oil and mix well.  Transfer to a storage container and refrigerate overnight.

  • Blend with olive oil and serve cold.
