What you’ll need:
~1 gallon
24 roma tomatoes, chopped
3 english cucumbers, peeled and chopped
6 garlic cloves, chopped
6 tbsp sherry vinegar
6 tsp smoked paprika
1 1/2 cup water
3 tbsp salt
2 1/4 cups extra virgin olive oil
Instructions:
Combine all ingredients in a mixing bowl except the extra virgin olive oil and mix well. Transfer to a storage container and refrigerate overnight.
Blend with olive oil and serve cold.
