everything parker rolls

“There is nothing better to clean your plate than a warm, homemade Parker roll. Try this recipe at home and watch the smiles on your friends’ and family’s faces blossom at the dinner table!” -Chef Ant

What you’ll need:

~1 batch

  • 9 tsp active dry yeast

  • 4 cups whole milk

  • 1 cup vegetable shortening

  • 3/4 cup granulated sugar

  • 6 tsp kosher salt

  • 4 eggs

  • 14 cups all purpose flour

  • 1 cup unsalted butter

  • 1 cup everything mix (can buy pre-mixed at Trader Joes)

    • To make at home:

      • 1/4 cup sesame seeds

      • 1/4 cup poppy seeds 

      • 3 tbsp dried onion flakes

      • 3 tbsp dried garlic flakes

      • 2 tbsp coarse sea salt

Instructions:

  • Heat the milk to 110-120 degrees

  • In the bowl of a mixer, with the dough hook attachment attached, mix the shortening, sugar, milk and yeast

  • Allow to stand for 5 minutes

  • Add kosher salt, eggs and flour

  • Mix on medium high for 5-7 minutes

  • Remove the dough from the bowl, and turn out onto a floured surface

  • Knead the dough for 4-5 minutes

  • In an oiled bowl, cover dough and allow to rise at room temperature for 2 hours

  • Punch dough down, and portion into 3.5 ounce balls

  • Roll each ball into a small baguette shaped loaf

  • Melt butter and butter the cooking tray

  • Arrange the loaves in the tray, buttering the top of them, as well

  • Sprinkle the everything mix on top of each roll

  • Cover and chill rolls for 1-2 hours

  • Preheat the oven to 250 degrees, and bake rolls for 25-35 minutes, until golden brown

  • Cool properly, and store in a dry place
