everything parker rolls

“There is nothing better to clean your plate than a warm, homemade Parker roll. Try this recipe at home and watch the smiles on your friends’ and family’s faces blossom at the dinner table!” -Chef Ant
What you’ll need:
~1 batch
9 tsp active dry yeast
4 cups whole milk
1 cup vegetable shortening
3/4 cup granulated sugar
6 tsp kosher salt
4 eggs
14 cups all purpose flour
1 cup unsalted butter
1 cup everything mix (can buy pre-mixed at Trader Joes)
To make at home:
1/4 cup sesame seeds
1/4 cup poppy seeds
3 tbsp dried onion flakes
3 tbsp dried garlic flakes
2 tbsp coarse sea salt
Instructions:
Heat the milk to 110-120 degrees
In the bowl of a mixer, with the dough hook attachment attached, mix the shortening, sugar, milk and yeast
Allow to stand for 5 minutes
Add kosher salt, eggs and flour
Mix on medium high for 5-7 minutes
Remove the dough from the bowl, and turn out onto a floured surface
Knead the dough for 4-5 minutes
In an oiled bowl, cover dough and allow to rise at room temperature for 2 hours
Punch dough down, and portion into 3.5 ounce balls
Roll each ball into a small baguette shaped loaf
Melt butter and butter the cooking tray
Arrange the loaves in the tray, buttering the top of them, as well
Sprinkle the everything mix on top of each roll
Cover and chill rolls for 1-2 hours
Preheat the oven to 250 degrees, and bake rolls for 25-35 minutes, until golden brown
Cool properly, and store in a dry place
