pecan brittle

What you’ll need:

~1 batch

  • 1/8 lb butter

  • 1 lb pecan pieces

  • 2 cups sugar, granulated

  • 1 cup corn syrup

  • 1/2 cup water

  • 2 tsp baking soda

  • 1 tbsp vanilla

  • 3/4 tsp kosher salt

Instructions:

  • On a parchment paper lined sheet tray, toast pecans for 5-7 minutes at 325 degrees.

  • In a sauce pot, bring sugar, water and corn syrup to a boil, and drop to medium heat, stirring occasionally, until candy thermometer reads 230 degrees, and mixture is clear.

  • Add pecans and butter carefully, stirring in with a heat spatula, and continue to cook until thermometer read 305 degrees.

  • Quickly remove the sauce pan from the heat, stir in the baking soda and vanilla, and pour mixture out onto a parchment paper lined sheet tray - spread out to desired thickness.

  • Sprinkle the kosher salt on top, cool, and crack into pieces.

  • Store in an airtight container.
