pecan brittle

What you’ll need:
~1 batch
1/8 lb butter
1 lb pecan pieces
2 cups sugar, granulated
1 cup corn syrup
1/2 cup water
2 tsp baking soda
1 tbsp vanilla
3/4 tsp kosher salt
Instructions:
On a parchment paper lined sheet tray, toast pecans for 5-7 minutes at 325 degrees.
In a sauce pot, bring sugar, water and corn syrup to a boil, and drop to medium heat, stirring occasionally, until candy thermometer reads 230 degrees, and mixture is clear.
Add pecans and butter carefully, stirring in with a heat spatula, and continue to cook until thermometer read 305 degrees.
Quickly remove the sauce pan from the heat, stir in the baking soda and vanilla, and pour mixture out onto a parchment paper lined sheet tray - spread out to desired thickness.
Sprinkle the kosher salt on top, cool, and crack into pieces.
Store in an airtight container.
