garlic dill pickles

“These pickles will add zest to any meal you choose to accompany. Start them now and by warmer weather, they will be perfect!” -Chef Ant
What you’ll need:
~20 lbs
brine
1 gallon apple cider vinegar
2 quart white distilled vinegar
1 lb sugar, granulated
8 oz kosher salt
4 oz black peppercorns
6 sprigs thyme
1/8 lb dill
4 oz garlic cloves
1 tbsp red pepper flakes
2 bay leaves
1 gallon ice
raw ingredients
1 lb garlic cloves
1/2 lb dill
20 lb cucumbers, kirby
Instructions:
Bring all brine ingredients EXCEPT the ice, to a boil for 5 minutes.
Pour brine over the ice, and allow to cool completely.
Pour brine over raw ingredients, and allow to sit for minimum 1 week, or 2-3 weeks for optimal pickling.
Refrigerate.
This recipe can be used as a base, and altered for many different types of pickles made in house!
