garlic dill pickles

“These pickles will add zest to any meal you choose to accompany. Start them now and by warmer weather, they will be perfect!” -Chef Ant

What you’ll need:

~20 lbs

brine

  • 1 gallon apple cider vinegar

  • 2 quart white distilled vinegar

  • 1 lb sugar, granulated

  • 8 oz kosher salt

  • 4 oz black peppercorns

  • 6 sprigs thyme

  • 1/8 lb dill

  • 4 oz garlic cloves

  • 1 tbsp red pepper flakes

  • 2 bay leaves

  • 1 gallon ice

raw ingredients

  • 1 lb garlic cloves

  • 1/2 lb dill

  • 20 lb cucumbers, kirby

Instructions:

  • Bring all brine ingredients EXCEPT the ice, to a boil for 5 minutes.

  • Pour brine over the ice, and allow to cool completely.

  • Pour brine over raw ingredients, and allow to sit for minimum 1 week, or 2-3 weeks for optimal pickling.

  • Refrigerate.

This recipe can be used as a base, and altered for many different types of pickles made in house!
