roquefort popovers

“Want to enhance your prime rib experience? Roquefort popovers are perfect for complimenting any roasted meal.” -Chef Ant

What you’ll need:

~24 popovers

  • 8.5 oz all purpose flour

  • .33 oz kosher salt

  • .1 oz black peppercorn

  • .05 oz flat leaf parsley, chopped

  • 20 oz whole milk

  • 4 eggs

  • 1 oz butter, unsalted

  • 6 oz roquefort cheese

Instructions:

  • All ingredients must be room temperature.

  • Preheat oven to 450 degrees.

  • Preheat muffin or popover tins in oven for 5 minutes.

  • Meanwhile, mix all scaled out ingredients together.

  • Remove tins from the oven carefully, and grease each individual cup evenly with pan spray.

  • Bake for 10 minutes at 450 degrees.

  • Drop to 350 degrees, and bake an additional 8-10 minutes, until done.

  • Cool completely in the tins, and carefully dislodge them to serve.
