This dish features 6 oz sweet tea brined boneless chicken thighs, 2 oz SC mustard bbq sauce, 4 oz gluten free baked mac n’ cheese, and 4 oz bacon braised collards.
We love this crisp, golden-brown Brined Chicken because it is tender, juicy and full of flavor. A sweet tea brine, in short, is a bath of salty, flavorful liquid. The salt in the brine seasons the chicken and changes the structure of its proteins, allowing them to absorb and hold onto more moisture. Brined chicken is more tender and moist, and less chewy than non-brined chicken.
Oftentimes, this method is used on a Thanksgiving turkey, but why wait for a holiday to enjoy it? Not to mention it’s super easy. Similar to marinating, you just need to plan a few hours ahead to give the chicken some time to soak up all those flavors in the brine. But after that, you can just sit back and relax until it’s time to throw it on the grill.
